Homemade Vanilla Ice Cream

As part of our trip to Rhode Island we stayed with the wonderful Kai. Kai is an excellent hostess and the proud owner of an old school wooden ice cream maker. I really enjoy making my own food from scratch, if I’m not taking pictures or out running I’m usually in the kitchen. But I can honestly say that I’ve never made ice cream before. The thought had never crossed my mind. But thanks to Kai, now I’ve tried it. And making ice cream by hand is a lot of fun.

The recipe for vanilla ice cream, from the desk of Kai:

  •  1 quart milk
  • 1 quart heavy cream
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 1 bag of ice
  • 1 cup rock salt (do not put in icecream… it’s toxic)

Once you’ve added in all of the ingredients you have to make a bed of ice in the wooden basket, adding in a bit of the rock salt to the bottom. The ice and rock salt are only for making the ice cream, they’re not for consumption. Put the metal bucket inside the wooden basket and fill between the two with the ice and rock salt mixture.

Now you have to place the metal top with crank handle on the top of the ice cream maker. Secure it in place and make sure that it won’t come loose. You wouldn’t want to make a sticky mess!

Kai’s last two instructions are:

45 minutes of man power

Enjoy!

And now the cranking begins. It’s best to take turns doing this, as your arm does get tired after a while (trust me on this). The ice cream is not going to be rock solid when you take it out, but it should have a soft serve consistency to it.

We enjoyed this so much that I forgot to take any pictures of the finished product! Oh well. Trust me, it was good. There were plenty of leftovers and we had some with homemade apple sauce, which was just fantastic.
